Strawberry Mint Fizz Keto Cocktail

Since I can’t drink the same cocktails as I use too, I created this strawberry mint fizz keto cocktail as an adjustment.   Most cocktails are loaded with sugar and I can’t get down like that anymore, so off to the kitchen, I went to try and whip something up. 

Although this recipe has a lot more alcohol content than I’m used to at this stage in my life I thought mixing Strawberries would give it a more fruity flavor. Adding sparkling water gives it a touch of fizz and dilutes the tequila a bit. Now don’t go getting your panties in a bunch, I’m a lightweight now, so I had to dilute it. I mean I can’t be getting drunk off of one cocktail. 

I also experimented with making a simple sugar. It took a few attempts to get the water and sugar substitute ratio right so it wouldn’t crystallize. 

One thing you will notice on Keto is your tolerance for alcohol will be much less than it used to, so if you’re thinking you want to add more alcohol proceed with caution, I’m just saying.

Strawberry Mint Fizz Keto Cocktail

Ingredients

Scale

10 strawberries plus two for garnishing

6 mint leaves plus 1 small sprig to garnish

1 oz tequila (I used Casamigos Blanco)

4 oz’s LaCroix limoncello sparkling water (or plain if that’s how you want to get down)

½ lime (squeezed)

3 oz’s low carb simple syrup (may have to adjust down if you don’t want it too sweet)

*2-3 drops of Strawberry Stevita Organic liquid drops (optional if you don’t want to make a simple syrup)

Instructions

Put the 10 strawberries, mint leaves, tequila, simple syrup or strawberry stevia, and lime juice in a cocktail shaker.  Muddle until the strawberries are crushed and have released their juices.  Add ice and LaCroix Limoncello sparkling water and shake until cold.  Pour in a margarita or martini glass.  Garnish with the extra strawberries sliced and small mint sprig.
