Spicy Chicken Wings

Since I had a craving for some spicy chicken wings, I thought I’d try bringing the heat this week through a marinade.  I mean who doesn’t enjoy spicy chicken wings especially when dipped in a blue cheese sauce. 

I have a standard marinade that I like to use when grilling chicken so rather than reinvent the wheel I’m just going to zhuzh it with some heat.  So after deliberating with a friend we thought if I add jalapeño and poblano peppers to my standard marinade would that do the trick.  

I put two jalapeño peppers and a poblano pepper and mixed it with the marinade in a kitchen aid.  Of course, the more spicy food you eat the more tolerance you will have.  However, I don’t want my chicken wings to be so spicy that I can’t enjoy them so to be on the safe side I removed the seeds from the peppers.  Ultimately the level of heat ranks on the mild side.  Granted, if you want more than mild heat, I say include the seeds.  

Typically the only time I eat blue cheese is when I have chicken wings.   Naturally for this occasion my friend recommended that I get the Saint Agur cheese from Whole Foods.  Clearly I’ve been missing out because this blue cheese dipping sauce far exceeds any I’ve had.  Undoubtedly it has everything to do with the type of cheese I used.  Finally, adding cherry tomatoes, celery and a few baby carrots for dipping helps make this dish a home run.

Spicy Chicken Wings

Ingredients

Scale

3 pounds of chicken wings/drumettes

Marinade
1/2 cup Virgin Olive Oil
¼ cup soy sauce
2 Tbsp worcestershire sauce
2 Tbsp apple cider vinegar
1 Tbsp garlic powder
1 tsp chili powder
1 tsp black ground pepper
2 Tbsp Smoky Dry Rub
1 poblano pepper
2 jalepeño peppers (remove the seeds)

Blue Cheese Dipping Sauce
¼ cup Mayo
¼ cup sour cream (low fat)
2 ½ ounces of blue cheese
1 Tbsp freshly chopped parsley
1 ½ Tbsp lemon juice
Pinch of sea salt
Pinch fresh ground pepper
2 garlic cloves finely chopped
¼ cup half and half

Instructions

  • Put all the marinade ingredients in a kitchen aid and pulse until the peppers are finely chopped Add the chicken wings and marinade into a container or ziplock bag
  • Let sit in the refrigerator to marinade for 8-24 hours
  • While the chicken is marinating add all the blue cheese ingredients into a small bowl and mix until all the ingredients are combined.
  • Cover the bowl and store in the refrigerator
  • After the chicken has marinated place on the grill on med – low indirect heat turning the wings frequently until done (my cook time was about 1 hour and 15 minutes to get the skin crispy)
  • Serve the chicken wings with baby carrots, cherry tomatoes, celery and the blue cheese dipping sauce

 

Notes

Serving size for the blue cheese dipping sauce is about 2 Tablespoons.  Nutritional values are the chicken wings and blue cheese dipping sauce combined.
