Spicy Cayenne Keto Brownie Bites

Back in the day I loved eating brownie bites so I thought I’d try my hand at creating some spicy cayenne keto brownie bites. Yea y’all, I’m bringing the heat through a dessert

My inspiration for this recipe came from a cookie.  The cookie in question is an oatmeal walnut chocolate chip cayenne cookie.  I spotted this cookie at the Lincoln Square farmers market over the weekend.  One of the vendors, pHlour which is a bakery and cafe located in the Edgewater neighborhood of Chicago had it on their menu.  While their best known for their bread this cookie is a popular item on the menu and sells out quickly. 

Even though I’d never eaten anything sweet with cayenne pepper, I must confess I was intrigued.  Yea, I know this cookie isn’t keto.  Ultimately, I had to do a taste test!  I mean, how would my taste buds react to a combination of sweet and heat?  OMG!!  The cayenne pepper provides a slow creep at the back of your mouth.  Keep in mind, that is after you’ve experienced the chocolatey richness from the cookie itself.  Y’all the party in my mouth from that one bite was so worth it that I immediately thought, I need to create a sweet treat with some heat.  Naturally I headed into the kitchen and to my delight, I nailed it on the first try.

Now If you are a fan of the fudge brownie this recipe doesn’t give you that same kind of denseness.  Moreover this recipe leans more like a cake brownie.   As far as flavor is concerned, it won’t disappoint.  For all you mom’s out there, you’ll be happy to know these brownies won’t have the kiddos bouncing off the walls.  Since monkfruit and allulose are sugar substitutes, they don’t elevate blood sugar levels.  Of course, younger kids may not be fans of heat.   So, you can forgo the cayenne pepper or adjust the ratio to a ¼ tsp which was barely noticeable.   

Consequently I took the brownies to a BBQ this weekend.   And the feedback was unanimous, they were moist, rich and the heat was a nice unexpected surprise.

Spicy Cayenne Keto Brownie Bites

Ingredients

Brownie Mix
 1 cup fine almond flour
¼ cup cocoa powder
2 tbsp of instant espresso coffee
½ cup chopped walnuts
¼ cup melted dark chocolate  ( I used 88% cocoa)
1 tsp baking powder
½ tsp sea salt
⅓ cup melted butter or coconut oil
3 Tbsp water
2 eggs (room temperature)
1 cup allulose or monkfruit granular sweetener
1/2 tsp of cayenne pepper
1 tsp of vanilla extract

Chocolate Cream Cheese Frosting
½ cup of cocoa powder
2 ounces melted chocolate (optional)
8 ounces cream cheese
¼ cup of butter
1 ½ cup of monkfruit powdered sugar
1 ½ tsp vanilla extract
2 – 4 Tbsp almond milk
Maldon sea salt flakes for garnish

Instructions

Brownie Mix

  • Preheat oven to 325°F/177°C
  • Grease or line an 8 inch pan with parchment paper
  • Melt the chocolate in the microwave for 1 minute at 30 second increments and stir in between
  • Mix all the ingredients well with a hand mixer
  • Spread evenly into the pan
  • Smooth down with a second sheet of parchment paper or lightly tap the pan on a cutting board
  • Bake for 35 – 40 minutes on the center rack then let cool completely.  They will firm up as they continue to cool and will become firmer if covered and placed in the refrigerator.

Chocolate Cream Cheese Frosting

  • ½ cup of cocoa powder
  • 2 ounces melted chocolate (optional)
  • 8 ounces cream cheese 
  • ¼ cup of butter
  • 1 ½ cup of monkfruit powdered sugar
  • 1 ½ tsp vanilla extract
  • 2 – 4 Tbsp almond milk 
  • Maldon sea salt flakes for garnish

Notes

For those of you who really like heat you can add ¼ -½ tsp of cayenne pepper to the frosting as well.
