The lovely thing about serving Cornish Hens for the holiday’s is its versatility as the main entree. It can also work as a lovely option for Sunday dinner. It pairs well with the cornbread stuffing, and each person can have their very own Cornish Hen or split one.

2 Cornish Hens (or think 1 Cornish Hen per person)
2 Lemons
5 Garlic cloves
1/4 tsp Sea salt
1/4 tsp Ground pepper
Trader Joe’s Chili Lime Seasoning
Dried or fresh Rosemary
Butter Olive Oil
Instructions
- Preheat oven to 450°F
- Pat dry the Cornish Hens
- Rub generously with the butter olive oil (or olive oil of your choosing)
- Cut 2 lemons in half
- place 1/2 of one lemon and the 5 garlic cloves inside the cavity of the Cornish Hen; place the other pieces in the pan
- Sprinkle half of the sea salt and pepper over each of the Cornish Hens
- Next sprinkle a generous amount of Chile lime seasoning covering the entire Cornish Hens
- Drizzle a few small rosemary sprigs on top
- Place in the oven and roast for 25 minutes
- Next reduce the oven temperature to 350°F
- Cook for another 20 – 25 minutes
- Baste the Cornish Hen frequently with the juices. You can add a bit of chicken stock if you find the juices have evaporated.
- Cornish Hens are done when the internal temperature reaches 165° and is golden brown
- Let the Cornish Hens rest for 5-10 minutes before cutting.
