Keto Italian Turkey Meatloaf

This keto Italian turkey meatloaf recipe uses ground turkey and sweet Italian turkey sausage.  Both are healthy options since they are lower in saturate fat.  Italian Turkey Meatloaf was part of my past rotation, but ya’ll know me, I had to zhuzh it up a bit to make it keto friendly. 

I typically have some keto bread rolls on hand in the freezer which make the perfect substitute for traditional bread crumbs.  I tried using pork rinds but found the bread crumbs work better.

Pairing the meatloaf with cauliflower mash potatoes and green beans are a nod to one of my favorite childhood meals.

Keto Italian Turkey Meatloaf

Ingredients

Loaf
1 pk 16 oz Jennie – O lean ground turkey
1 pk 19.5 oz Jennie – O lean sweet Italian Turkey Sausage (remove the casings)
½ cup Keto bread lightly pulsed in food processor (about 2-3 rolls)
1 egg
1/4 c green onions sliced thinly
1/2 cup unsweetened ketchup
1 clove garlic minced
½ tsp ground pepper
½ tsp salt
1 Tbsp fresh basil finely chopped
1 Tbsp extra virgin olive oil
½ tsp of fennel seeds

Topping
2 Tbsp worcestershire sauce
½ cup unsweetened ketchup

Instructions

Loaf

  • Heat oven to 350°F
  • Lightly pulse 2-3 keto bread rolls in a food processor until crumbly
  • In a large bowl or kitchen aid combine ground turkey, turkey sausage without casing, ½ cup of ketchup, garlic, pepper, salt, basil, olive oil, green onions and egg; mix well
  • Fold in the bread crumbs
  • Put the turkey mixture into a 8 ½ x 4 ½ inch loaf pan

 

Topping

  • In a small bowl mix together the other ½ cup of ketchup with worcestershire sauce
  • Spread over the top of the turkey mixture
  • Cook for 1 hour 45 minutes
  • Drain any excess liquid
  • Let sit for 10 minutes before serving

Notes

You can substitute turkey with 96% extra lean ground beef or you can use 1 lb or extra lean ground beef with 1 lb ground chicken.
