Keto Friendly Piña Colada

This week I’m bringing you another summer cocktail, the keto friendly Piña Colada.  It’s one of my favorite summer cocktails and always reminds me of sunshine, the beach and tropical islands

Of course, pineapple isn’t something you can indulge in on keto since it contains a lot of sugar.  However, the way to get around that is to use pineapple extract.  The first pineapple extract I tried didn’t cut the mustard. It had a fake taste to it.  So, that saying, “You get what you pay for,” couldn’t be more true.  Needless to say,  I had to break down and go with the brand that hasn’t failed me yet, Amoretti.  Yes their pineapple extract is on the pricey side, but a little goes a long way.  Besides, I’ve been itching to do a keto version of a pineapple upside down cake.  

It should be noted that you don’t want to confuse coconut cream with cream of coconut.  Actually cream of coconut is higher in sugar and carbs therefore it isn’t Keto friendly.  On the other hand, the coconut cream I used is organic, and unsweetened.  Besides, it only contains only 1 gram of sugar and 1 carb which makes it perfect for this cocktail .  Because the coconut cream is not sweet, you’ll want to check out my recipe for simple syrup to give this drink the right amount of sweetness.  I hope with this recipe you can now enjoy a keto friendly piña colada under the sun.

Keto Friendly Piña Colada

Ingredients

Scale

1 cup ice
½ cup coconut cream
1 ½ ounce white rum
1 ounce simple syrup
½ ounce fresh lime juice
½ tsp pineapple extract
Fresh cherry for garnish (optional)
Wedge of pineapple for garnish (optional)

 

Instructions

  • Combine all the ingredients in a blender and pulse until smooth and creamy
  • Pour into a highball or hurricane glass and garnish with a cherry and a wedge of pineapple.
