This week I was in the mood for some french onion dip. Seeing that french onion dip is made with caramelized onions and higher in carbs, this one is more keto friendly. And it takes only 5 minutes to make. Admittedly I used dried shallots verses dried chopped onions and that gave this dip a slightly sweeter taste. Ultimately you should choose whichever dried onion works for your palette.
When enjoying the keto lifestyle it’s important to eat three square meals along with 1-2 snacks per day. In truth, snacking sometimes is a challenge for me because I don’t have a huge appetite. So, whenever I can find something on the light side it makes snacking easier.
While shopping for my weekly groceries I happen to come across cauliflower tots. Now I should mention that before keto I loved tater tots, however I hadn’t tried cauliflower tots. Naturally this peaked my curiosity. I whipped up a batch in my air fryer which gave them a nice crispy outside thus making them perfect for dipping in my french onion dip. Ingredients
1 c. sour cream
1 Tbsp dried shallots or dried chopped onion
1 tbsp onion powder
½ tsp of garlic powder
¼ tsp salt
1 tbsp chopped chives or 1 tsp dried chives
2 oz’s cream cheese (cold and cut into cubes)
Instructions
- Add the sour cream, dried shallots, onion powder, garlic powder, salt and chopped chives in a small bowl
- Then combine the cream cheese cubes with the other ingredients using a hand mixer and mix until smooth and creamy.
- Place in the fridge to chill for at least one hour so the onions can softened.
