Keto Blueberry Waffles



1 cup almond flour
¼ cup coconut flour
3 tsp monkfruit granular sugar (or your sugar substitute preference)
1 tsp baking powder
5 large eggs
¾ cup unsweetened vanilla almond milk
¼ cup avocado oil
1 ½ tsp vanilla extract
¼ tsp sea salt
¼ cup sliced blue berries


  • In a medium bowl whisk together the almond flour, coconut flour, monk fruit, baking powder and salt. 
  • Then mix in the eggs, almond milk, avocado oil, and vanilla extract stirring until combined.
  • Plug in the waffle maker and spray the top and bottom with cooking spray.
  • Fill a ½ cup measuring cup with the batter and pour into the waffle maker.
  • Drop a few blueberries throughout with the skin side facing up.  I find this keeps the blueberries from sticking to the waffle maker.
  • Set your waffle maker to the desired setting depending on how golden you want them.  I have a Cuisinart so I set mine to 5 the highest setting.
  • Close the lid and wait for the green light indicating your waffle is done.  
  • Repeat the steps until all the batter has been used.  
  • Top with a little drizzle of Choc Zero syrup which has zero grams of sugar

For Pancakes

  • Heat a pan with avocado oil since it has a higher burn rate
  • Fill ½ cup measuring cup with mixture
  • Pour into pan and cook until the edges start to bubble then flip
  • Yields about 8 pancakes



You can place these in a ziplock freezer bag and store in the freezer.  Just pop them in a toaster oven, microwave or toaster to heat and serve with Choc Zero or any other sugar free syrup.  If you want smaller portions use a mini waffle maker with ¼ cup of batter for one waffle.

Blueberry waffles are a breakfast option the entire family can enjoy.  Kids won’t be able to tell the difference and it’s low carb, score!
