Admittedly the first time I tried to make the cucumber mojito it was a failure. Either my muddling technique was off or I didn’t have good mint. And, surprisingly the mojito is a cocktail bartenders don’t particularly enjoy making. Simply put they don’t want to take the time it takes to muddle the mint. In fact, my muddling technique or perhaps the type of mint contributed to poor results. With this in mind, I tried a different mint which I muddled in the shaker first to better release the juices followed by muddling the cucumber.
Although the mojito originated in Havana, Cuba there is a difference of opinion regarding who invented the cocktail. Be that as it may, this cocktail was originally a medicinal drink to curb disease. It should be noted that Ernest Hemingway pathed the way for its popularity followed by a feature in the James Bond film Die Another Day.
Now the original mojito is a combination of mint, sugar and rum. But, adding cucumber adds an interesting twist. In addition to the cucumber, I tried a ready made simple syrup. Of course, if you don’t want a ready made simple syrup you can always follow my recipe.
In the end I found this version of mojito to be right up my alley. Simply put, the addition of cucumber refreshes this cocktail while neutralizing the sweetness. Undoubtedly adding the cucumber mojito to your rotation of summer cocktails is guaranteed to be a hit.

Ingredients
5 thin slices english cucumber, plus more for garnish
8 fresh mint leaves, plus more for garnish
1/2 lime cut into 4 wedges
1/2 ounce fresh lime juice
1/2 ounce simple syrup
2 ounces white rum
5 ounces club soda
Instructions
- place the mint in a shaker and muddle to release their juices
- add the cucumber, lime juice, lime wedges, and simple syrup and muddle more
- Pour the rum into the shaker. Cap and shake vigorously
- Fill a glass with ice
- Pour the contents of the shaker into the ice filled glass and top with club soda
- Garnish with cucumber slices and fresh mint
