Blue cheese dipping sauce is the perfect compliment to buffalo chicken drumettes. And since I recently added an air fryer to my collection of kitchen gadgets it’s the perfect excuse for me to try out the fryer setting. Especially since I’ve only used my it for warming things up.
When a blue cheese dipping sauce is paired with the spiciness of buffalo drumettes it soothes the heat. Which gives it less of a bite. Of course, that’s if you’re a lightweight when it comes to heat like myself. If you can handle the heat then the added flavor profile from the blue cheese makes for a party in your mouth.
Surprisingly, some may say blue cheese tastes like vomit because of the butyric acid. But depending on the quality of blue cheese this may not always be the case. In fact, I’ve come across two different brands, Saint Agur and Salemville, that are really delicious. So much so that I’ve used this dipping sauce with an assortment of veggies. Another dipping sauce option is my dill sauce
Seeing that flour is a no no on keto I substituted coating the chicken with seasoned flour and instead used a blend of seasonings with baking powder. It only took 24 minutes to get some nice and crispy drumettes. For a while now I’ve found it hard to find drumettes in the store. My way around that was to cut and discard the wing tip then cut the joint where the drumstick and wing come together and voila instant drumettes.

Ingredients
Blue Cheese Dipping Sauce
¼ cup Mayo
¼ cup sour cream
2 ½ ounces of blue cheese
1 Tbsp freshly chopped parsley
1 ½ Tbsp lemon juice
Pinch of sea salt
Pinch fresh ground pepper
2 garlic cloves finely chopped or minced
¼ cup half and half
Air Fry Chicken
1 lbs Chicken wing drumettes
1 tsp baking powder
1 tbsp garlic powder
1 tsp onion powder
½ black pepper
1 tbsp seasoning salt
Buffalo Sauce
½ cup tabasco sauce
½ tsp worcestershire sauce
1 tsp smoked paprika
2 garlic cloves minced
¼ cup unsalted butter
Instructions
Blue Cheese Dipping Sauce
Directions
In a small bowl crumble the blue cheese
Add the remaining ingredients and blend together with a hand mixer
Refrigerator until ready to serve
Air Fry Chicken Drumettes
Directions
Put all the dry ingredients into a ziplock bag
Towel dry the drumettes then place inside the ziplock bag
Shake the bag until the drumettes are nicely coated
Cover the bottom drip pan with aluminum foil for easy clean up
Arrange the drumettes in the air fryer basket with a little space between each piece
Set the air fryer to temperature to 400°F and set the timer to 12 minutes
Turn the drumettes over then set the temperature to 425°F and the timer for an additional 12 minutes
Buffalo Sauce
Directions
While the drumettes are cooking melt the butter with the garlic in a small sauce pan.
Remove the sauce pan and add the remaining ingredients.
In a medium size bowl add the drumettes. Pour the buffalo sauce over the chicken then toss until coated
Serve with the blue cheese dipping sauce
